Have you considered titration for a more precise pH test? Nothing against strips, however they can be rather unreliable, in fact up to value off. I think you'd be surprised how things we think are neutral, are in fact still acidic or alkaline. You seem to be coming along with your understanding of chemistry. I would be more than happy to supply you with a more precise mechanism to do your test. :)
